Wild rabbit with cheese and mushroom recipe utilises the convenience of Campbells condensed mushroom soup. Gareth found this very easy recipe in a magazine and I have used it ever since.

Rabbit Recipe
Ingredients:
1 wild rabbit,
1 tin of condensed soup,
1 onion, chopped,
50g mushrooms, chopped ,
100g cheese, grated,
olive oil and seasoning,
Preparation Method:
Place jointed rabbit in oven proof dish drizzle with oilive oil, salt and pepper.
Pour condensed soup, mushrooms, cheese and onion over the rabbit and cover
Put back in a moderate oven (170 C) for 3 hours, remove the cover for the last hour.
Serve with rice, potato’s, pasta, bread or anything.
Hints and Tips:
Just try it once, you’ll be amazed how tastey rabbit is.
