A very traditional easy quick dish is Roast venison haunch, my favourite recipe for this is Sophie’s Quick Roast Haunch.

Several customers this year have asked me about cooking Venison Wellington for Christmas dinner. There are two cuts I would consider for this, the topside joint, or the whole sirloin.
